Hey everyone, I hope you all had a wonderful Easter weekend. This past week was full of meals that left me feeling good and I want to tell you all about it! I’ve been snapping pictures (almost all were pre-tasting;) and now looking back at them is making me drool. Let me preface with saying I don’t usually have time for lunch, with my work schedule, so I may snack on some fruit or hydrate extra mid-day. Additionally, some of these dishes turned into leftovers for other meals. I love how it all came together while keeping my eating balanced and intuitive.
Breakfasts That Started My Mornings Right




Mornings have been extra lovely lately. I used to love waking up early when I worked the morning shift of a coffee shop. However, I reverted to my night owl behaviors and have been slowly transitioning back to loving mornings, over the past year. Something that has been crucial for my progress is finding a Morning Moment. Romanticize an action or item that you can look forward to each morning. This can be a special breakfast, an extra step in your skincare routine, or five minutes to journal or meditate. I kicked things off by making heart-shaped waffles topped with berries, whipped cream, and chocolate sauce. Everything about this breakfast screamed, “Morning Moment!” Another day I had an easy breakfast scramble with a side of strawberries. I love to prep the hash browns and sausage to make mornings quicker. I just add the mixture to a warm, oiled pan and then crack a few eggs in the center. The almond croissant from Form and Function was a buttery dream, and a poppyseed muffin finished my week off quick and delicious.
Dinners That Hit The Spot




This week’s dinners were a mix of home-cooked and eating out, and I love the variety. One night, I made a chicken burrito bowl with cilantro lime rice. I found an easy recipe on Pinterest and it was delicious. I whipped up a quick guacamole that took it to the next level! Another evening, I gobbled up pesto tortellini with chicken, drizzled in a balsamic glaze. It felt fancy but was actually super easy! Ground turkey tacos were a quick win—spicy, fresh, and perfect for a busy night. They also made the best leftovers! For my indulgence, I hit In-N-Out for an animal-style cheeseburger and fries. Which, in my opinion, is the best way to get it. I like to try and live by the 80/20 rule—eating whole foods 80% of the time and indulging 20%. Some weeks, balance looks a little more like 60/40, and that’s okay too!
My Easter brunch was the perfect way to end the week. It included ham, an adorable bunny-shaped waffle, breakfast casserole, and salad varieties.

Finding My Balance
I’ve learned that eating intuitively makes me feel the best. This means stopping when I’m satiated and not forcing myself to finish a plate. Leftovers from these meals carried me through the week , and I loved repurposing them for other dinners or quick snacks. If I’m peckish midday, I’ll grab an Apple or some grapes to keep me going without overdoing it. I also make sure to tune into what my body needs. Craving a treat? I’ll have it, like that almond croissant, but I’m mindful of portions so I still feel light and energized. It’s all about feeling good while enjoying food. No guilt, just joy!
